Step 1: Fresh Milk from Desi (A2) Cows

Our journey begins with fresh, wholesome milk from indigenous A2 cows. These cows are raised with care and allowed to graze naturally, ensuring their milk is nutrient-rich and full of vitality. Why it matters: A2 milk is easier to digest, rich in calcium and proteins, and supports immunity from within.

Step 2: Turning Milk into Curd

The fresh milk is gently boiled, cooled, and set overnight into thick curd using a natural culture — just as our grandmothers once did. Why it matters: This natural fermentation enriches the milk with probiotics, making it gut-friendly and nourishing.

Step 3: Traditional Bilona Churning

Once set, the curd is churned slowly using the traditional bilona (wooden churner), turning it both clockwise and anticlockwise. This separates the rich white butter from the nutritious buttermilk. Why it matters: This gentle churning process preserves the essential nutrients and maintains the natural balance of the ghee.

Step 4: Fermenting the Butter

The fresh milk is gently boiled, cooled, and set overnight into thick curd using a natural culture — just as our grandmothers once did. Why it matters: This natural fermentation enriches the milk with probiotics, making it gut-friendly and nourishing.

Step 5: Slow Heating into Golden Ghee

Finally, the fermented butter is heated slowly over a low flame. The water evaporates, milk solids settle at the bottom, and the clear golden liquid that rises to the top is our Bilona Ghee. Why it matters: This slow, careful cooking locks in nutrients and creates ghee that is rich in antioxidants, good fats, and vital vitamins.
